I'm Cooking! Again!! Ü

Well, here is the steak tips and asparagus that we cooked on the grill.

010x

I marinaded the steaks all afternoon before grilling using this recipe that I got from this website!

If you like marinating and grilling I highly recommend you check it out. They have some fabulous recipes!
Herby Steak Marinade with Garlic and Lemon

Ingredients -

1 teaspoon oregano
1 chopped onion
1 teaspoon dried thyme
1 teaspoon garlic salt
¼ cup vegetable oil
½ teaspoon black pepper
½ teaspoon celery salt
½ cup lemon juice

Preparation:

Mix all the marinade ingredients together and pour this mixture over the meat in a *glass dish.
Turn the steak a few times to cover it with the marinade then cover the dish and let the meat marinate overnight or for at least 6 hours.
*I used a plastic container with a sealed lid and keep it in the refridgerator, it makes it easier as I like to turn the container over every so often to coat the meat.

Discard the marinade and cook the steak.

This lemon and garlic marinade is a very flavorful and the garlic salt and celery salt add even more flavor. If you do not have these flavored salts on hand, you can just substitute regular salt instead and perhaps use some garlic powder or a clove of crushed garlic in the recipe. The end taste will be very similar.

Easy steak marinades do not come much simpler than this delicious recipe because you just have to marinate the steak in the combined ingredients and leave it for a while. The lemon juice in this steak marinade recipe is great for tenderizing the meat and the onion works nicely with it to add a distinctive flavor.

And the asparagus was very easy as I just tossed it together in a ziplock bag with some balsamic vinagrette dressing (but I have also used italian and both are good) and placed them directly on the grill; and using tongs I would scoop and flip to turn them so they would cook evenly on all sides.

And I made macaroni salad also.

Macaroni Salad 008x

I really didn't use a recipe for this so I can't tell you exact measurements but I can tell you the ingredients! Ü

1 - 1 lb package small shells cooked
I mix these next ingredients in a seperate small bowl before adding to the macaroni.

1 to 1 1/2 cups mixed Miracle whip/Mayo combo or more so that the salad is moist (I love Helman's which I believe is the same company as Best Foods out west, but it is my favorite)
Mustard probably 1 - 2 tablespoons
1/2 teaspoon celery seed
1/2 teaspoon salt
1/8 Cup Dehydrated Onions
And 1 pint jar of homemade Bread and Butter Pickles drained and chopped!

Now I did add a bit of cayenne for a kick and a bit more sugar as I like it sweeter than my homemade pickles can provide, using store bought may be sweet enough I don't know.
I like to err on the side of caution and taste it as I go, as you can always tweak it more but you rarely can tweak it less!

Then mix macaroni with the dressing and add 5 chopped, boiled eggs and use two sliced eggs for garnishing the top. Then sprinkle with paparika to make it look pretty!

Yay! It's the First Day of Spring!

Really? Well, where did this stuff come from then?

019x

Booo... Boooooo!

And I had to run errands today so while I was outside I took this close up of the snow on my car...

016x

Webster said it was snowing sticks and stones!
Certainly looks like it... and it feels like it might as well be too!
It's certainly putting a damper on my spring aspirations!

First day of Spring! Bah Humbug!

I've been cooking!

Grilled Shrimp Scampi

104x

I had originally planned on making steak tips on the grill but Webster misunderstood me when I had asked him to put the package of meat in the refridgerater downstairs... and instead he stuck it in the freezer!! I had the grill going and frozen meat so I had a slight change of meal plans!

The marrinade is rather simple, just a mixture of lemon juice, olive oil, garlic, parsley, salt and a touch of cayenne!
I marrinated the shrimp for about a half hour and then scewered them before popping them on the grill.
The rest of the sauce was added to the pasta and tossed to coat.

It was really good even if it was pulled together at the last minute!

And the Steak tips are still to come!

Oxy-moron

I love that word! Oxymoron!

104

Especially the moron part...

107

did you know that moron is synonymous with stupid?

111

Seriously, how smart is it to ride your bike on the ice in Flip Flops?

114

Oh well... moron is as moron does I guess...
and moronism might be hereditary... but he couldn't possibly get that from me!

Heh heh heh

On a different note... Spring has sprung even if not officially yet!!

We have crocuses that have emerged from hiding! Yay!

Another Day... Another Doctor!

Okay tomorrow, I'm meeting Madison over at the cardiologists office in Westerly because when we were at the pharmacy getting Webster's presciptions filled she sat at the blood pressure machine and her blood pressure was great! But her pulse was 108 and we hadn't been running no marathons! And she says it's even been higher than that! Not a good thing!

So I was calling around today for appointments, I almost took her back to the same clinic that I had Webster at yesterday if I had known then I would have had her checked out then and there... but it is actually better this way skipping right to the main doctor!!

And I don't know if Webster's cough is sounding too much better... it sounds a bit different but it's still very deep and noisy hopefully by tomorrow things will start loosening up, or drying up... or whatever needs to be done for him to be better!!

And here's a pic of our pup... I think he loves me. ♥

I ended up taking Webster to the walk in clinic today as he has been going back and forth with a cold for over 3 weeks now and we have both had enough, my poor young-uns cough was starting to sound really nasty!
He was diagnosed with a BAD case of bronchitis... he was given two prescriptions and I was told if he was not any better by friday they want him to come back for a chest xray... I'm hoping and praying we don't have to do that!

*Sorry for the reposts... I had to remove private information from my picture... D'oh!
